Of all the many things we can do to increase our vitality, improve our mental outlook and accelerate our healing, juice therapy is probably one of the most delicious and easiest to incorporate into your life. Fresh juice, fruit or vegetable, is a power packed delicious tasting liquid overflowing with vitamins, minerals, amino acids and live enzymes to benefit your health in every way. It is easily assimilated and tasty, while being gentle and agreeable to even the most delicate of stomachs.

Because of its liquid nature it is completely digested within 20 minutes, ready to enter the blood stream and go to work bringing vital nutrients and oxygen to hungry cells and thirsty tissues.

Most meals take somewhere between 3-5 hours to completely digest; if dairy is added you need another 2 hours for assimilation. The addition of meat or chicken further slows things down, sometimes taking 3 days to completely work through a heavy meat meal, holding everything else up in the process.

Meanwhile the process of digestion itself requires a lot of energy, many times the energy that was received from one meal goes right back in to help digest the next one. This greatly limits the amount of energy available for repairing and cleaning, slowing down the healing process. Wounds and illness take longer to heal and there is almost always the lingering feeling of fatigue. It is no wonder so many people and even small children feel cranky and exhausted, interfering with work, school and general daily life.

Juice, on the other hand, provides pure energy in a balanced and pleasant way, while providing a necessary tonic for the important and overworked organs of elimination such as the liver, kidneys, gall bladder, etc. Fresh juice keeps the body's energy level high, the nerves calm, the mind clear and the muscles, heart, hair, teeth, nails and bones strong.

Beverages such as coffee, tea, soft drinks etc. contain additives, chlorine, sugar, preservatives and an array of other ingredients the body must eliminate before it can meet its needs for purified fluids.

We are fortunate here in Jerusalem to have a host of fresh juice stands dotted all around the city. Usually available are orange, grapefruit and carrot juice. These are made for you on the spot from locally grown produce. There are also a few more adventurous juice bars around town, including one organic restaurant that has interesting fruits and vegetables to make interesting combinations and blends. In your travels around town be sure to stop in for 5 minutes and treat yourself.

The ultimate best juice in terms of flavor as well as nutrition is made from organically grown food, but because most of the pesticides remain in the fiber of the fruits and vegetables, even the juice made from not organically grown produce is OK to drink. If you have the advantage of your own home juicer, so much the better. If you are thinking of buying one for yourself or your family a one of the best types locally available is the kind they use at the juice bars. This one has a strong motor and makes good tasting juice. Another possibility is the AEG Phoenix or Acme ????. Whatever kind of juicer you get it should be one that completely separates the juice from the pulp and has a strong motor.

To obtain optimal health it is best to drink your freshly made juice within 6 minutes of being made. Israel is blessed with a wide variety of excellent locally grown organic produce. Be adventurous! Try different combinations and find your personal and family favorites. Not surprisingly children really love to drink juice so it becomes an easy and pleasant way to insure that your kids are really getting their vitamins in a way will enjoy.

Two of the most familiar of juice are carrot and orange. Good in their own right, they are especially good as a base for the addition of their juices. Try juicing together - orange or tangerine, straw berry and pineapple. Peeling the citrus and putting it through the juicer with the white pith gives you an extra vitamin boost with the extra bioflavanoids and creates a creamy ambrosia effect. In the summer add other berries in place of strawberries such as blackberries, mulberries or cherries. Each one adds its own special flavor.

The same can be done with apple. If the apples are organic just wash them in cold water and cut into quarters leaving the skin on, but removing the apple seeds. If they are not organic, it is best to peel them first. Try apple/grape, cherry or pomegranate. The yellow delicious apples are the sweetest, but try a combination of yellow delicious and Yonatan or green apples.

Other possibilities are:

Apple-pineapple, apple-strawberry, apple-pear or peach, apple-ginger root, apple-kiwi

Grape juice watermelon juice can also be made in a blender (or mashed by hand) and then poured through a strainer. The possibilities are almost endless!

Start your day with this and your life will never be the same again. Additions to the basic carrot juice include Carrot-celery-beet, carrot-cabbage (green or red), carrot-cucumber-parsley, carrot-cauliflower, carrot-sprout (alfalfa, buckwheat, sunflowers)

Optimally you should have 2-3 large glasses of fresh juice of some sort each day, always before meals. 20 minutes later you are ready to eat.

Smoothies -

Try adding papaya or banana to fresh juices and blending them - amazing!

Apple-strawberry-banana
Orange (or tangerine) - strawberry-papaya (or banana)
Peach-orange-banana.

People who are overweight and those who are underweight will begin to become closer to their 'right' weight and stay there. Anyone with diabetes or hypoglycemia should work with a health care professional before implementing dietary changes.

To be healthy in a toxic environment is a very challenging occupation these days, but one in which we don't have the luxury of ignoring. Let's help each other to get well and stay there. L’chaim!
